Image models struggle with hands because hand structure is highly complex in training data — fingers overlap, different angles, occlusions. Neural networks learn statistical patterns, but the precise spatial relationship of 5 fingers is hard to model. Both Stable Diffusion and Midjourney simply can't count to 5 when it comes to fingers.
